Calan Restaurant & Bar serves up the city's multicultural energy
The recently opened Haven Hotel Rotterdam, Curio Collection by Hilton has now officially opened Calan Restaurant & Bar. A place where worldly flavours, creativity and the city's multicultural energy come together. Led by highly experienced Executive Chef Michael Verhagen, this culinary hotspot offers refined dishes that translate Rotterdam's diversity and dynamism into taste, experience and design.
The name of the new restaurant refers to Pieter Caland, the visionary engineer behind the Nieuwe Waterweg, who in the 19th century ensured vital shipping routes and connected Rotterdam to the world. Just as Caland connected Rotterdam to the world, the restaurant brings guests together around gastronomy, culture and creativity. At Calan Restaurant & Bar, Rotterdam's multicultural energy is felt in every detail: from the interior and music to the dishes and drinks.
Calan's dinner menu reflects the stories and flavours of Rotterdam, a city shaped by international influences and communities. Each dish combines classic European techniques with seasonal ingredients, highlighting pure flavours and bringing together influences from diverse cuisines.
Hamachi, Charlotte Potato and cantaloupe
Thus, Zeeland hamachi is served with a delicate dashi vinaigrette and Turkish apricot chutney, a subtle nod to the historic Silk Road and Spice Route. Executive Chef Michael Verhagen, known from the Michelin-starred Fitzgerald, sways the sceptre. His signature dish is the Charlotte Potato: slow-cooked potato with kombu, Surinamese masala and Indonesian seaweed - a tribute to Surinamese and Javanese heritage. The cantaloupe dessert with sakura and umeboshi is inspired by the Japanese hanami tradition.
"Together, the dishes form a culinary portrait of Rotterdam: open, layered and constantly evolving. Inspired by the city's diverse heritage - from Suriname to Indonesia - we translate our personal experiences into each creation. We look forward to letting both Rotterdammers and out-of-town guests discover these flavours," says Michael Verhagen.
