At the monthly Suitcase Economy Brunch, relationships, translation, economics, and time are explored through dishes prepared with ingredients traveling via suitcases, whose histories are extended through barter, fermentation, and preservation.
Monthly Suitcase Economy Brunch is a testing ground for experimenting with relation, translation, economic models and time through the preparation and serving of food. Every brunch is prepared with ingredients moved from one place to another via suitcases, that informed a history of food bartering. The lifespan of these produce is often extended through a fermentation or preservation process.
Menu:
Fish or Mushroom Kimchi Burger, served with Korean fermented and preserved sides
Price:
€10 per person (drinks not included)
€5 if you exchange a homemade fermented or preserved product, harvested produce from your garden, or a specific ingredient for cultural dishes
Ingredients in Edition #1:
Gochujang flakes, homegrown by Yunseop Kim and brought from Chuncheon by Seokyung Kim and Donghwan Kam; seaweed flakes from Seoul, brought by Binna Choi; gurke by Marlies Crooijmans; pears and apples from Grad van Enckevort, Sevenum; Korean cucumber and dried aster scaber from Jeju Island, both brought by Riet Wijnen.
