Dive into the old Tropicana swimming pool and learn how to make tempeh yourself in the BlueCity Lab.

During a BlueCity Expedition, you'll immerse yourself in the circular world of BlueCity in a single afternoon, taking a tour of the former subtropical swimming paradise. Here, you'll smell, taste, and see how the circular economy is being put into practice at BlueCity! The tour will be led by Emma van der Leest, founder of BlueCity Lab, the world's first circularly built biolab.

Tempeh making workshop

During this Expedition, you'll not only discover inspiring examples of the circular economy from BlueCity entrepreneurs; you'll also get hands-on experience. After the tour, our fungus expert and biotechnologist Nick van Biezen—known among BlueCitizens as "the Funguy"—will be at the BlueCity Lab to lead you through a tempeh-making workshop.

Tempeh is a traditional Indonesian protein product, often used as a meat substitute and very versatile in cooking. It is usually made from fermented soybeans. By using a fungal culture, the beans grow together into a firm, white cake with a nutty flavor and a firm texture. It is rich in protein, fiber, and vitamins, and is a sustainable and nutritious alternative to meat.

In this workshop, led by Nick, you'll learn how to make your own tempeh with a local twist. You'll go home with your homemade tempeh-to-be.
